Yummy twist on asparagus
I usually purchase a large bag of asparagus from Sam's Club because it's less than anywhere else and you get more.
Ingredients:
- 2 large beaten eggs
- 1 cup of Panko bread crumbs
- 1/2 cup of grated Parmesan cheese, I used Kraft
Instructions:
- Preheat oven to 425 degrees
- Cover large baking sheet with oil olive
- Combine bread crumbs and cheese on a large plate*
- Beat eggs in a large bowl
- Dip asparagus in eggs and then in bread crumb and cheese mixture, coat well
- Place asparagus in a single layer on the baking sheet
- Bake for 15 minutes until asparagus becomes crispy
*Cover large plate with plastic wrap before putting bread crumb and cheese mixture on it to make clean up easier.
